It affects more than 21 million people worldwide, with increased incidence as over the years (reached the peak at about 75).

However, it also can develop in young people in general recorded a prevalence of three to one between men and women. While once the condition has been presented so far is not possible to achieve a cure, and thus achieve the abandonment of the drug, it is much that can be done in the field of prevention.

Within this context, a study conducted in England, which involved 25 000 people and lasted for eight years found that the addition of fruits and vegetables that contain a pigment called carotene to the diet can help reduce the risk of developing arthritis.

As stated in the American Journal of Clinical Nutrition, the most beneficial and yet is frequently carotenoids beta-carotene or provitamin A, which provides more than color, has an important role in many biological functions and high antioxidant power. The results of the experiment showed that daily consumption of beta-carotene and zeaxanthin was between 20 and 40 percent lower in the group identified with arthritis, compared with 176 patients who had no signs of the disease.

For that reason, scientists concluded that people who do not have a daily intake of foods rich in beta carotene and zeaxanthin had twice the risk of developing arthritis, taking as a parameter to those that ate food with this property.
